When Ken Hebert helped Pampa beat Amarillo High in 1961, the Sandies were coached by Bum Phillips, whom Hebert later joined at the University of Houston. Phillips was a defensive coach on Bill Yeoman's staff.

During Ken Hebert’s childhood, he participated in Amarillo’s Kids, Inc. programs.

He went on to play football for the University of Houston; he led the Cougars in scoring (246 points, including 22 touchdowns) and receiving (90 catches for 1,785 yards). During his sophomore season, he totaled 3,147 punting yards, still a UH record. In 1966, as a junior, Hebert led the nation in scoring with 113 points, the fourth-best During the spring of the same year, he helped the Cougar baseball team reach the College World Series championship game. In 32 games, he hit .345, including seven doubles, one triple, and four homers. Hebert drove in 18 runs, scored 24 times, walked 20 times, and stole 15 bases.

He was chosen by Pittsburgh in the third round of the 1968 draft, but was promptly traded to Minnesota. Injuries limited his playing time with the Vikings, and they waived him. He was acquired by the Saints just before the 1969 season began.
